Celebrating the Allium
Onions, garlic and shallots, oh my!
With all the holiday cooking before us, our kitchens are filled to the brim with alliums. This family of flowering plants includes hundreds of species such as the leek, chive, shallot, scallion, garlic and onion. In most of these cases, we eat the bulbs of the plant.
Often, these versatile, wonderfully flavored ingredients are hidden in braises, soups and stews. As you’re designing your holiday menus, here is a great recipe to consider. This lovely tart really showcases the onion, with a little help from its friends apple and bacon. Enjoy!
