Bacon Apple Fritters with Maple Syrup

Tart and green granny smith apples are my favorite for this dish.

  • Yields: 18 fritters


4 1/2 cups all purpose flour

1 1/2 tsp salt

3 tsp baking powder

3/8 tsp baking soda

3 large eggs

3/4 cup milk

1 1/2 cups peeled and chopped granny smith apples

3/4 cup apple juice

1 cup maple syrup, plus more to serve

1 cup brown sugar

1 cups chopped cooked bacon

3 tbsp melted butter

vegetable oil, for frying

powdered sugar, to garnish


1Sift together the flour, sugar, salt, baking powder and baking soda into a large bowl.

2Beat the egg with the milk in a medium bowl. Stir in the apples, apple juice, maple syrup, brown sugar, bacon and melted butter.

3Stir the apple mixture into the dry ingredients just until moistened.

4Heat 3 inches of oil to 350 degrees in a counter top fryer or in a heavy, deep sauce pan or dutch oven. Scoop out heaping tablespoons of batter into the hot oil and fry, turning a couple times, until crisp and cooked through. Drain on paper towels.

5Serve with a drizzle of maple syrup and a sprinkle of powdered sugar.
