Cheesy Sweet Cornbread

A sweet, buttery, cheese-laden cornbread.

  • Yields: 12 servings


1 cup unsalted butter

2 cups cornmeal

1 cup all purpose flour

1 tsp baking soda

2 tsp salt

2 cups fresh corn kernels

2 cups grated parmesean cheese

4 eggs

2 cups buttermilk

2 cups sugar


1Preheat your oven to 350 degrees. Place the butter in an 9x13 inch baking pan. Place in the oven for 4-5 minutes to melt the butter. Set aside.

2In a large bowl combine the remaining ingredients. Pour into the butter filled pan - but do not stir in the butter. Bake 25-30 minutes for the full pan or until a toothpick inserted in the center comes out clean.

3Let cool for 15 minutes before cutting.

Perfect as a side to bring to your next BBQ or as a simple oven-warmed slice on it's own!
