1 lb yukon gold potatoes
non-stick cooking spray
kosher or sea salt, to taste
1Thinly slice the potatoes with a mandoline, food processor or by hand. Bring 2-3 quarts water to a boil in a medium sauce pan along with a good tablespoon of kosher salt. Cook the potatoes in batches, until slightly translucent - only about 1 1/2 minutes. Scoop out with a slotted spoon and let drain.
2Place wire racks on cookie sheets and spray lightly with the oil. Spread the potatoes out in a single layer, season with salt or other seasonings of choice and place in a 200 degree oven. Let bake until crisp - about 2 - 2 1/2 hours. Serve right away or cool and remove to an airtight storage container.
