Olive Tapenade

This is a beautiful spread for crackers and breads or to accompany creamy goat cheese.

  • Yields: 1.5 cups (12 servings)


2 cups pitted black or green olives

1 tsp fresh thyme leaves, minced (or use 1/4 tsp dried)

1 1/2 tbsp capers, drained

2 tsp minced garlic

1/4 cup extra virgin olive oil

1/2 tsp freshly ground black pepper

1 tbsp fresh lemon juice (or to taste)

3 anchovy fillets (optional)


1Pulse everything together in the food processor until a spreadable paste, you don't want it too chunky or too smooth.

2Taste and season if needed with salt and more pepper lemon or garlic.

The traditional spread includes anchovies. These are, of course, optional.
